I wanted to make something a bit different for my birthday gathering last year and this went down a treat, I've been making it, and drinking it, ever since. Like the best of recipes it can be adapted to your taste, I love the fiery ginger flavour that the cordial adds but you could use freshly grated ginger instead or leave it out entirely if you prefer. To give it a seasonal kick finish it off with a generous splash of your favourite tipple.

1.5 litre of good quality still cider or scrumpy, I normally use Westons Organic which comes in a 3 litre box
2 cinnamon sticks
2 fresh bay leaves
2 lightly crushed cardamom pods
4 allspice berries
1 tablespoon of honey
2 tablespoons of ginger and lemongrass cordial (optional)
A splash of rum, brandy, or similar, Calvados and honey rum both work really well!
In a large pan add the cider and all the spices and warm gently on a low heat.
Once warm add the cordial and honey and check the sweetness, you may need to add a little more honey especially if not using the cordial.
Take off the heat and cover to keep warm, add the splash of rum or brandy just before serving. Enjoy x
