Summer Fruit Fool
500g summer red fruits such as blackcurrants, redcurrants, raspberries, strawberries and blueberries
100g caster sugar
400ml whipping cream
400ml natural yoghurt
2 tbsp icing sugar
Serves 8
8 dessert glasses, wine glasses or small ramekins
Place the red fruits into a large saucepan with the caster sugar and heat on a low heat for 5 minutes until the fruits begin to soften. Use a hand blender to puree the fruit, adding a tablespoon or two of water if needed.
In a large bowl whip the cream until it forms soft peaks then fold in the icing sugar and natural yogurt. Add a couple of tablespoons of the blended fruit mix to the cream and fold in. Take the 8 glasses or ramekins and divide the blended fruit between them saving a little to add after the cream. Now fill nearly to the top with the cream mixture and finally top with a little more of the soft fruit.
Garnish with fresh fruits and serve with homemade shortbread or biscotti.
This fool can be made with frozen red fruits, simply defrost before warming in the pan. Fresh fruit will be needed to garnish as the frozen fruit doesn’t hold shape once defrosted.
The fool can also be made with gooseberries or rhubarb, simply add more caster sugar to taste when cooking as both can be very sharp. Soft fruits such as apricots or nectarine can also be used or added to the red fruits.
