Spicy tomato & bean soup
2 red onions
1 large red pepper
2 cloves of garlic
Large splash of olive oil
˝ tsp dried chillies
˝ tsp cumin seeds
1 tsp smoked paprika
2 tins chopped tomatoes
1 tbsp tomato puree
˝ litre vegetable stock
2 tins of beans such as kidney, borlotti or cannellini
This recipe serves 8 as a starter or 4 as a main course.
Start by finely chopping the garlic then finely dice the onions and red pepper. Add to a large pan with the olive oil and sauté gently for 5-10 minutes until soft.
In a pestle and mortar crush the chillies and cumin then add to the pan along with the paprika and sauté for a further 2 minutes. Good quality sweet paprika will give the lovely smokey flavour to this soup.
Add the remaining ingredients and simmer gently for 15-30 minutes until it reaches a nice consistency, add more stock if it becomes too thick. Season well with fresh black pepper and sea salt to taste. Serve with chopped fresh parsley, basil or coriander and a dollop of sour cream or similar.
